Sinking pellets are needed by many round-bodied goldfish to help prevent digestive system problems caused by the extra intake when fed floating foods. These are ideally fed in a bare bottom tanks or those with sand as a substrate. Normal and large gravels can trap and hide the food. When fed on similar sized gravel it can increase the chances of the fish ingesting gravel which can block the digestive system.
Floating foods are fien for almost all long-bodied or pond types.
Do not soak foods. Many vital nutrients are water-soluble and even a short soak can greatly reduce the concentrations of these nutrients in the food. If you need to soak a food to get it to sink, you really need to just be looking for a different food.
It is not that one is better than the other, both have different uses.
