Are you looking for plants a siamese algae eater will eat, or plants they'll leave alone?
SAE's don't only eat algae. Infact, they should be given a good mix of foods, including fresh leafy veggies (like lettuce, kale, etc), cucumber, as well as sinking pellets, flakes, algae wafers, whatever else they'll take. If you do that they'll pretty much leave whatever plants you put in your tank alone. If you don't have special lighting, fertilizer, co2, then stick w/ easy to grow plants like java moss, amazon swordtail, anachris, etc. Your petstore should have a good selection.
An ideal tank for SAE's should be long, oxygenated (fast moving water), slightly acidic, and heavily planted.

I have heard that simese algae eaters are not very compatible.
they will eat other fish, including their own kind.
At my lfs, they had a tank full of them, and 2 were on the bottom, dead. the others were crowded around them jut picking away at what was left of the carcass.

Lettuce, cucumber, spinich and other soft veggies can go in raw. Ones like zucchini, and other squash, you might want to blanch a bit in dechlorinated water first. For veggies with thicker skins (cucumber and zucchini) cut them in half or quarters legnthwise before putting them in the tank. That way your fish can get to the softer insides.

Good advice kusackaid. I'd also rinse all the veggies you give them w/ dechlorinated water if possible. For the leafy veggies, they sell little baggie clips w/ suction cups at most pet stores that work really well for holding it down. Cucumber and squash should sink to the bottom. Be sure to remove any uneaten bits.
