I have had to restart my tank, and I am going barebottom this time, no more nasty things hiding in the gravel to break out and kill the fish while I am on vacation. ANYWAY, I am wanting to plant an anacharis (sp?) forest along the back and would like to use terracotta pots but are all terracotta pots aquarium safe? And should I buy that expensive plant substrate to plant them in or what? Also what size pots should I get for a healthy bunch of anacharis? I have a 55 gallon(long) by the way.

untreated terra cotta is fine as far as I know.
If you can find the thinner oblong pots, I'd grab one of those - unless you'd like mulitple little pots
If you go with the smaller, individual pots and we considter a bunch to be what you'd find at a petstore... a 3" pot will be fine
anacharis is fine with just normal gravel
