I'm currently building a new pond, it'll be approx. 3,000 gallons and around three feet deep and I'd like to stock it with butterfly koi....when the time comes, how many do you think should go in there?

it depends on your filtration, well filtered ponds can have 1 koi per like 300 gals or so... soso ponds should look at 500 gals per koi. soo your looking at between 6-10 koi
you should dig your pond to at least 4 feet, better protection from predators, better overwintering, more swimming room.
also, if you haven't already, you should consider bottom drains, they're not actual drains that are only used once in a while, they remove water from the pond to the filtration unit by gravity, the pump comes after the filter usually.
hope this helps!

Thanks for the advice

. I just guessed about the depth, I can't find anyone that knows anything about ponds around here, luckily it'll be very easy to make it deeper, thanks!
