So far Ive looked up some potato flake companies. I would say They pulverize or mill the mix then it is pressed between rollers and baked into sheets at about the same time. Since we do not have rollers to press and bake it might be hard to get the flake thin enough to be of any use.
I am sure there is a way to create flakes but it might be alot easier just to make the paste thicker and freeze it into small cubes or flat in a ziplock. Alot less time consuming too.
Also if you have a pasta machine you could make it similar to a pasta mix and use the thinest setting you could find and make pellets by cutting them off every so often and then drying them either in the oven on low or dehydrater.
